What is the best sugar for making a sweet bread?


Also, while I am planning on making a sweet zucchini bread, I don't feel like buying a bread pan.
Would a muffin pan work with a bread recipe?

Sunshine H has a pretty good answer, but agave and/or rice nectar work really well also! You already know about the probs with white and brown sugar, but raw sugar works and doesn't have the 'charcoal/carbon/char' problem<g>.

Who needs a loaf pan? Got any deep casserole dishes (like Corning)? How about oven safe steel or glass bowls (mixing or soup)? An oven safe pot? Cake or pie tins? Howsabout an empty coffee can<VBG>? If all else fails fold some heavy duty aluminum foil into whatever shape you like (just set it on a cookie sheet)<G>.

And just in case you don't have a timer (since you don't have a loaf pan<smirk>) just bake @ 350 until it starts to smell good and then use the toothpick trick. If you don't have a toothpick you can even test with your finger, gently touch the top of the bread and when you can feel the bread is firm and the indentation you made slightly bounces back it's done.

I've used sucanat in banana nut bread. It had the molasses type of flavor that I was looking for. I'm not sure if you want a
brown sugar/molasses flavor, but that's one option if you do.
However, the only places I've found it at have been Whole Foods and Natural Foods stores.

yes it would and you could use pure cane sugar but that is too sweet so use brown sugar!! I think it is cool that you are making zucini bread i love zucini I think it has no taste but it tastes so great I wish i could make zucini bread do you think you could send me the recipe. I would really enjoy that! Anyway good luck with the sugar problem! Remember use brown sugar!!!!!!! :)

For the sweetener, maple syrup is pretty good at making items sweet, but not overly sweet like sugar. As for the muffin pan, typically you can, but time is varied, usually less! I suggest looking for other bread recipes that also give times converting to muffins, and do a rough estimate. And if all else fails, set the timer for 20 minutes and check with a toothpick, continue for every 5 minutes there after!
