What is the best vegetarian chili recipe known to you?

1 tablespoon vegetable oil
1 cup chopped onions
3 cloves garlic, minced
1 cup chopped green bell pepper
1 cup chopped red bell pepper
3/4 cup chopped celery
1 tablespoon chili powder
1 can whole peeled tomatoes with liquid, chopped
1 can kidney beans with liquid
1 can whole kernel corn
1 tablespoon ground cumin
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil


Heat oil in a large saucepan over medium heat. Saute onions, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

My Lazy A** Chili

3 cans Rotel Chili Fixin's
3 cans black-eyed peas
1 can kidney beans
1 can navy beans
(optional: Morningstar Crumbles [fake ground beef])

(you can use whatever beans you like, I just like black-eye peas the most)

Directions: throw in a slow cooker... go to sleep

Yeild: enough for five or more (depending on appetite)

If you want a healthy version, just replace all the canned stuff with fresh ingredients. Personally, I like the lazy a** version because it cooks quickly, and I don't want to wait 12 hours to eat. I have tested it, and I love it. If you want more/less spice, adjust the amount of Rotel you put in it.

Oh, and make sure none of the canned beans are packed with animal fat (I've checked the Rotel ingredients... they're ok).

4 cans black beans, rinsed
2 bay leaves
3 tbsp olive oil
3 cloves garlic, chopped
1 (14 1/2 oz) can diced tomatoes
4 tbsp tomato paste
1 cup vegetable broth
3 fresh jalepenos, chopped
2 tbsp ancho chili powder
1 tsp paprika
1 tsp dried oregano
1 tsp unsweetened cocoa powder
1/2 tsp ground cumin
1/2 tsp cinnamon
1 tbsp balsamic vinegar
1/2 fresh cilantro, chopped

In a large pot, simmer onions, garlic, and jalapenos in olive oil until tender. Add remaining ingredients, except vinegar and beans and cilantro. Simmer about 15 minutes. Add beans and vinegar, cover, and simmer 35 minutes. Remove lid and simmer until thickened, about 5 minutes. Stir in cilantro and serve. (~6 servings)
