Could someone give me a great exotic recipe that includes yellow lentils?


Someone gave me some during the holidays and I don't want to cook them plainly. How can I make the best of them?

Yellow lentils are great, I practically live off them.
My favourate recipe is tarka dahl, have it with pilau or boiled rice and masses of coriander.

You will need:
Lentlils
1 big onion
3+ Cloves of garlic (I use about 6)
Tomarto puree
1+ red chilli
3+small green chillies
1 tablespoon ginger and garlic paste (equal amounts of ginger and garlic put in a blender)
cumin seeds
ground tumeric
garam masala for seasoning

Put the lentlils in a large pan with water and bring to the boil, once boiled cook on a low heat and continually top up with water as they absorb a lot. Add 1 tablespoon tumeric and salt.

Meanwhile finely chop about a quarter of all your garlic and between half and all of a large red chilli.
Heat some oil in a saucepan and add a tablespoon of cumin seeds, after about a minute of continually stirring them add the garlic and chilli. When the garlic is golden pour into the lentils and stir. At this point add some roughtly chopped coriander. It doesnt matter if the lentils havent even finished boiling at this point, they will have plenty of time to keep cooking and blend with the flavours.

Next chop the remaining garlic into slices or finely depending on your preference. Cut at least 2 of your green chillies down the middle and scoop out the seeds. Finely chop any remaining chilli. Measure approximatly 1 tablespoon of tomarto puree and 1 tablespoon of ginger garlic and put in a bowl with the garlic and chilli.

Cut the onion into thin rings. Heat some oil in a pan and add another tablespoon of cumin seeds, after a minute add the onions. Toss them around so that they have mixed with cumin seeds and fry on a high heat until they go really, really brown. Make sure they dont stick so keep stiring them. When they are brown enough they should smell sweet. Take half out and leave them on the side. Add the bowl of garlic and chilli etc and stir alot. When the garlic looks cooked and everythings combined together, it may look a bit of a mess, pour the contence of the saucepan into the lentils.

Stir until everything has mixed together really well and add more coriander. Serve with popuadoms and rice with a sprinkle of garam masala, loads of coriander and the discarded onions ontop, these should be sweet and delicious, enjoy.

Vegetarian turtle soup.

Ingredients:
1c. water.

Instructions: bring water to a boil. remove from heat and let stand ten minutes. Enjoy with crackers and lentils on the side.

but substitute the stock for either your own veggie or mushroom stock, or just water.

Curried lentil soup is fantastic too, do a search and you will come up with loads of recipes

I have also cooked them and let them cool a little, I add breadcrumbs and cumin, onions and basil. Roll them up into little balls and bake them. then I make spaghetti and lentil balls, or lentil ball subs (my guy loves them).

2 Tablespoons vegetable oil
2 medium onions, chopped
3 medium carrots, cut into 1/4-inch rounds
3 celery ribs, cut into 1/4-inch thick slices
1 (6- to 7-pound) chicken
2 quarts chicken broth or canned low-sodium broth
1 quart cold water, or as needed
4 sprigs of fresh parsley
3 sprigs of fresh thyme or 1/2 teaspoon dried thyme
1 bay leaf
Salt and freshly ground black pepper
2 cups egg noodles
Chopped fresh parsley, for garnish
1 Can Yellow Lentils

look up a dish called dahl, and that has yellow lentils.
