Can someone give me a list of vegetables that do not contain starch?


Also, is there a way I can tell if a vegetable has starch by just looking at it.

Non-Starchy Vegetables

Sprouts (bean, alfalfa, etc.)
Greens 鈥?lettuces, spinach, chard, etc.
Hearty Greens - collards, mustard greens, kale, etc.
Radicchio and endive count as greens
Herbs - parsley, cilantro, basil, rosemary, thyme, etc.
Bok Choy
Celery
Radishes
Sea Vegetables (Nori, etc)
Broccoli
Cauliflower
Cabbage (or sauerkraut)
Mushrooms
Jicama
Avocado
Cucumber (or pickles without added sugars)
Peppers (all kinds)
Summer Squash (including zuchinni)
Scallions or green onions
Asparagus
Bamboo Shoots
Leeks
Brussels Sprouts
Snow Peas (pods)
Green Beans and Wax Beans
Tomatoes
Eggplant
Artichoke Hearts
Fennel
Onions
Okra

Almost all Root Veggie, Grains..I mention Grains because most people think of Corn as a veggie when it is actually a grain.
If you are avoiding Starchy Carbs think GREEN, very few Green Veggies are starchy. English Peas a little high.

Green leafy vegetables

Usually anything that is a root vegetable has starch.

Potatoes I think.
