Can someone suggest a versatile meat substitute, other than tofu? |
I like tofu and use it a lot, but I'm wondering what else is available. Like, if I want to make Beef Strogonoff, a casserole, etc., recipes that traditionally require ground beef, what else can I use that's not meat? Thanks so much for all the great suggestions! I am going to use them tonight when I go grocery shopping. soy burgers, boca burgers Vegetarian Fake Meats It is important not to jump off the bandwagon too quick because of the stigma around tofu and it's bland taste when not properly seasoned. What you need are some good recipes for tofu, because it pretty much is the most versatile thing you could be looking for. Try tofu cutlets, by breading them with italian style bread crumbs using egg replacer and nutritional yeast. Veggie burger basically soy based but they're pretty good. When I was a kid my folks put me in one of those brat camps, it was run by Seventh Day Adventists, total vegetarians they are. I thought the food would be terrible but it turned out to be pretty good. Amazing the variety you can get out of that stuff. TVP - it's super cheap and comes in granules, chunks or slices. try using eggplant, or soy beans... Portabello mushrooms make a great meat substitute. Just chop them up and use them like you would ground meat, or grill them whole and serve them like a burger. hello I enjoy using mushrooms in place of meat. In my spaghetti, I use chopped/diced mushrooms and they are wonderful. I also love them with grilled broccoli and garlic in a burrito. Most major grocers carry the GimmeLean product line from LightLife. The product comes in a roll similar to a meat based sausage roll. If your primarily used to cooking meat its very easy as you can brown it and cook it just the same. Specifically I use it in Stroganoff as well which is when I first used the product and have adapted it to many recipes that require that type of product. The earlier suggestion of TVP is kinda unrealistic for what you are asking for as its typically found like a granule and you would need to add water or liquid based form your pieces then cook then add to your dish. Look for the product in the cold case near the deli area. Usually you have to look a little bit but if your familiar with where these foods are in your local grocer you will easily find this item. There are other like items but I think you'll find this product easiest to use for what your trying to accomplish. You can use morningstar farms frozen "meat" its in the frozen food section in a green bag and it is equal to one pound of ground meat, it is tvp texturized vegetable protein. It tastes really good. I use it in sloppy joes, chili or anything you would use ground beef in. Also if you drain your tofu really well and freeze it and then unthaw it ,it has a meatier texture when you cook it. Myco-protein (biggest brand that uses it is quorn) is really good, I use it a lot. they do a beef style mince, a lamb style mince, chicken style burgers and fillets, beef and pork style Burgers and bacon style rashers amongst many others. Also dried porcini mushrooms can be great, you rehydrate them in water or stock, and they have a lovely meaty texture when chopped into a sauce, whilst being very low fat, and having a bit of protein. If you combine these with lentils and kidney beans, it can make a great base for a ground beef like meal. Tempeh, Seitan...both amazing\ For Beef Strogonoff, seitan is the way to go. Seitan is wheat gluten that, when marinated the right way, can taste just like what you want. I first had seitan at Candle 79 in NYC, and I had to stop and ask if it was really steak! There are tons of other options, too: TVP, soy, tempeh... experiment. My local natural food store has dried TVP that looks like little chicken breasts, and I marinate them for a while in barbecue sauce, throw them on the grill, and voila! Barbecue chicken. I bought the Candle Cafe Cookbook which has a recipe for seitan steaks and seitan cooked like veal, and both are DELICIOUS. Good luck! Seaweed. (asian cuisine) like seaweed wraps in a sushi. TVP... off the top of my head I can't remember what it stands for but it is a vegan meat substitute and can be used for many meat recipes. I have used it in casseroles, lasagna, etc. I LOVE Morning Star Farm's Meal Starters "griller Crumble" it's a delicious ground beef substitute.. Sometimes people use "tofu" and "soy" as synonyms, although tofu is made of soy, they aren't interchangeable. As a vegan myself, I can tell you many good vegan/vegetarian substitutes for meat. First off, is the boca burger. These come in many different flavors, and are DELICIOUS! there are also many different kinds of Tofurkey that would work. |
