What vegetarian recipe can I cook for my meat-loving boyfriend?


My boyfriend won't believe me that vegetarian food is really good. I'm cooking him dinner tonight. What can I cook him so that he belives me. Something to WOW him.

We are not vegetarians, but I try to make at least one meatless meal a week. One of the favoirtes is bean and cheese buritos. We each make our own. We have beans, rice, cheese, tomato, onion, jalapeno, salsa, sour cream, guacamole. It makes it personal, so you can do what you like with your meal.

We eat this all the time, of course I add the ham, but you can leave it out.

South of the Border Black Bean Soup

Recipe By: Quick Meals
Serving Size: 12



-= Ingredients =-
2 tablespoon Oil
2 medium Onion ; chopped
4 cloves Garlic ; minced
5 1/2 cups Vegetable broth
4 cans Black beans
20 ounce Corn
2 tablespoon Chili powder
1 tablespoon Oregano
pinch Cayenne pepper
2 Bay leaf
Ham ; Julliane (optional)

-= Instructions =-
In soup pot, heat oil, cook onion and garlic about 5 min or until it starts to brown.

Add broth, beans corn, spices.

Bring to boil, reduce heat and simmer 15 min. Remove bay leaves.

Remove about 3C vegetables and blend in processor until smooth. Return to soup

Add ham (if using)

Serve with tortilla chips, sour cream, tomato and green onion.




Arrabbiata Sauce

Serving Size: 3
Cuisine: Italian
-= Ingredients =-
1 teaspoon Olive oil
1 cup Onion ; chopped
4 cloves Garlic ; minced
3/4 cup Red wine
1 teaspoon Sugar
1 tablespoon Basil, Fresh
1/2 teaspoon Red pepper flakes
2 tablespoons Tomato paste
1 tablespoon Lemon juice
1/2 teaspoon Italian seasoning
1/4 teaspoon Pepper
2 can (16 oz) Tomato ; diced

-= Instructions =-
Saute onion and garlic in oil for 5 min.

Stir in wine, sugar, basil, red peper, tomato paste, lemon , Italian seasoning, pepper and tomatos and bring to a boil.

Reduce heat to medium and simmer uncovered about 15 minutes.

Serve over pasta.


Pasta with Fresh Tomato and Basil Sauce

Serving Size: 6

-= Ingredients =-
1/4 cup Onion ; chopped finely
2 cloves Garlic ; minced
2 tablespoons Olive oil
3 lbs Tomatoes ; fresh, peeled, seeded and chopped
1/4 cup Spaghetti
1/4 teaspoon Salt
1/4 teaspoon Pepper

-= Instructions =-
Cook onion and garlic until tender.

Stir in tomatos, salt and pepper, bring to a boil.

Simmer uncovered 35-40 minutes.

Stir in basil, cook 5 minutes more.

Or, don't peel tomatos and just heat until warm.

Serve over spaghetti.

Chicken Fried Portobello Mushroom with Mashed Potatoes and Gravy Recipe

4 portobello mushrooms
1/4 cup milk
4 eggs, beaten
Salt and pepper
1 cup flour
1 cup coarsely ground bread crumbs
1 tablespoon thyme
1/2 pound melted butter
Mashed Potatoes, recipe follows
Cream Gravy, recipe follows

Stem and brush off surface debris from mushrooms. Whisk milk and eggs until incorporated. Add salt and pepper. Mix flour, bread crumbs, thyme, and additional salt and pepper.
Heat butter in skillet. Dredge mushroom in egg wash, then in crumb mixture. Fry mushroom until golden brown on both sides. Serve with Mashed Potatoes and Gravy.


Mashed Potatoes:
5 baking potatoes like russets, unpeeled
1/4 pound butter
1/4 cup heavy cream
Salt and pepper

Boil potatoes until fork tender. Drain well. Add remaining ingredients and mash well.

Cream Gravy:
2 tablespoons butter
2 tablespoons flour
2 cups heavy cream
Salt and pepper

Make the roux by melting butter in a saucepan. Add flour and stir until incorporated. Add heavy cream and stir well until simmering. Remove from heat and season with salt and pepper

Serve with Mexican Street Corn and he should be happy and full.

4 ears sweet corn, husks removed
2 tablespoons corn oil
1/2 cup mayonnaise
1 teaspoon chili powder
1 teaspoon garlic salt
Freshly ground black pepper
1 lime, quartered
Special equipment: grill pan

Preheat a grill pan. Rub corn with oil and place on the grill pan, turning corn so all sides are charred, about 6 to 10 minutes. Meanwhile, mix together mayonnaise, chili powder, garlic salt, and black pepper. Remove corn from grill and brush with the mayonnaise mixture. Serve with lime quarters to squeeze over corn.

Think "Manly Food!" Enchiladas, Burritos, Chilli, Burgers, etc. Search the web and you're bound to find a meatless recipe for all of these. Anything filling and heavy will distract him from the fact that there's no animal on his plate. And try to avoid calling it "vegetarian." If you just serve a delicious meal, they won't miss the meat! Trust me!

I am a meatlover but my vege head friend talked me into going to a vege restaurant. I ordered the BBQ seitan sandwhich. seitan is the glutin extracted from wheat .It has a texture close to meat. I had it on a french roll with lettuce tomato and BBQ sauce. It was great and I went back myself to order it again. You can find it at any health food store and it costs about $4 a lb. Try it you'll like it

Go out and buy a couple of those bowls made out of bread, cut the tops off and take out the center of the bread, then fill with veggie chili or hamless split pea soup.

Try taking portabella mushrooms and hiding a med rare ribeye under them and some brown gravy... he'll love it!!
