What are some good things to cook at a vegetarian barbecue?


I'm a new veggie with a nice back yard and a grill.

Portobello mushrooms can be marinated, grilled, and served on a bun just like burgers. Another good option are grilled veggie kabobs; you can add chunks of tofu to these as well. Also, I like to do corn on the cob on the grill. Peel back the husk but leave it intact, and remove all the silk. Then brush them with a little olive oil or margarine, chili powder, and a squirt of lime, and fold the husk back up over the corn. Then just grill for about 15-20 minutes.

Grilled potatoes and veggies in a foil wrap to cook, add in veggies you desire, and some olive oil, salt and pepper

Try veggie burgers, and veggies. Also try a sweet onion, cut in quarters, (but don't cut all the way thru) then open up and put some vegan butter in it with some chopped fresh garlic, (store bought chopped in jar is good) use your own judgement on amount to use, wrap in foil and cook until done. This also works good in the oven too, at 350 degrees for about 30 - 45 minutes. Excellent!!!

If you're gonna barbecue, then BARBECUE!

I marinate lots of veggies and grill them and of course there is always the veggie burger and veggie dog!

There are so many veggies that are good grilled. Corn on the cob, potatoes (slice, toss with olive oil and seasonings, and grill in foil packets), eggplant, zucchini. and yellow squash (cut at an angle, or lengthwise) either brushed with olive oil and seasonings, or marinated in teriyake sauce. Portabello mushroom caps are awesome grilled. You can also do many of these as kebabs. For protein, you can make a bean or lentil salad, or a big green salad with chickpeas and baked marinated tofu (they come in many flavors).

Zucchini grills REALLY well, as does pineapple (try it glazed with a butter-rum sauce....amazing!).

Also kebabs of squash, tomato, onion, mushroom, and maybe even tofu (not sure how well it grills) are a good idea.

What about pizza? Cook it directly on the grill.

Place the dough on the grill for about 3-5 minutes until the crust is golden. Turn it over so the browned side is now on the top. Add your toppings, and cook another 4-5 minutes, perhaps closing the grill lid for the last 2 minutes.

Toppings? Fresh tomatoes, fresh mozzarella, tomato sauce, eggplant (precooked!), basil, barbecue sauce and beans, cheeses, salsa and refried beans, humuus and baba ghanouj.

And, serve with a big tossed green salad with an olive oil and balsamic vinaigrette.

Black Bean Burgers
1/2 onion, diced
1 can black beans
1/2 cup flour
2 slices bread, crumbled
1 tsp garlic powder
1 tsp onion powder
1/2 tsp seasoned salt
salt and pepper to taste
oil for frying
Sautee the onions till soft, about 3-5 minutes.
In a large bowl, mash the beans until almost smooth. Add sauteed onions and the rest of the ingredients, except the oil, adding the flour a few tablespoons at a time to combine well.
Mixture will be thick.
Form bean mixture into patties, approximately 陆 inch thick and fry patties in a small amount of oil until slightly firm.

Tequila Flavored Portobella Mushrooms
1/2 cup tequila
1/4 cup margarine, softened
3 tbsp olive oil
1/4 cup lime juice
5 cloves garlic, minced
4 portobella mushrooms, stems removed
Whisk together the tequila, margarine, olive oil, lime juice and garlic. Allow to sit for at least ten minutes.
Baste the mushrooms with the tequila mixture, then place on grill.
Allow to cook for 3 to 5 minutes, then turn and baste with more of the tequila mix and cook for another minute or two.
Top with additional tequila mixture if desired before serving.

Curried Grilled Seitan Kebabs. A vegetarian and vegan barbecue recipe, perfect for your summer or holiday cookout. This seitan recipe is also Indian inspired, with a strong curry flavor.
INGREDIENTS:
1 1/2 pounds seitan, chopped into 1 inch chunks
2 onions, coarselt chopped
5 bell peppers, any color, chopped into 1 inch chunks
1 cup whole cherry tomatoes
1 cup whole mushrooms
1/3 cup olive oil
3 tbsp sesame oil
1/4 cup curry powder
1 tbsp salt
1 1/2 tsp garlic powder
barbecue skewers
PREPARATION:
Place the the seitan, onions, peppers, tomatoes, and mushrooms on the barbecue skewers.
In a shallow baking dish or large ziplock back, combine together the olive oil, sesame oil, curry powder, salt and garlic.

This one's not for the kids! Tequila-flavored portobella mushrooms are an impressive dish to bring to a barbecue or cookout. You can eat them plain, or place them on a bun and eat them like a veggie burger or veggie sandwich. Who says vegetarians and vegans can't barbecue!?

The term 'Vegetarian' was coined in 1847. It was first formally used on September 30th of that year by Joseph Brotherton and others, at Northwood Villa in Kent, England. The occasion being the innaugural meeting of the Vegetarian Society of the United Kingdom.

Prior to 1847, non-meat eaters were generally known as 'Pythagoreans' or adherents of the 'Pythagorean System', after the ancient Greek 'vegetarian' Pythagoras.

The original definition of 'vegetarian' was "with or without eggs or dairy products" and that definition is still used by the Vegetarian Society today. However, most vegetarians in India exclude eggs from their diet as did those in the classical Mediterranean lands, such as Pythagoras.
