What is a good vegetarian meal to prepare for meat eaters?


I want to have some people over for dinner. My brother in law is pretty picky. I want to make something vegetarian for dinner to let people see that the way I eat is never boring and that I am not missing out on anything. I don't want something too different but something that would appeal to everyone. Pasta is too easy..what are some recipes I could make? Any ideas? Thanks!!

If you're not vegan try a great cheesy quiche or homemade pot pie. You can buy an already made pie crust or make your own. I love Marie Calendar's pie crust. For the quiche mix 6 eggs, a veggie of choice like broccoli or spinach, some onions and maybe mushrooms, shredded cheese. I also add a little feta for extra flavor. Salt, pepper and garlic powder. Pour it in the pie crust and bake for about 45 minutes at 425 degrees. It will be done when it no longer jiggles in the middle. For the pot pie heat a tablespoon of butter in a skillet and add 8 cups of a combination of these vegetables - corn, cubed carrots, chopped peppers, chopped zucchini, spinach leaves, sliced onions and potatos - cook for 5 minutes on medium heat then add a clove of chopped garlic. Cook for another 5 minutes. Sprinkle about 3 tablespoons of flour on the veggies and saute for 2 minutes. Add 2 cups of slightly warmed milk(you can use soy milk if you prefer)., slowly, stirring while you add it to avoid lumps. Then stir in a pinch of thyme. Bring the sauce to a simmer and cook until thick. Continue to cook until veggies are tender, adding more milk if it gets too thick. Pour the mixture into your pie shell (deep dish), then put the top part of the pie shell on, pinch it down, trim the sides and bake at 450 for about 25-30 minutes.

Serve either quiche or pot pie with a nice green side salad and enjoy!

If you make veggie lasagna, add some red aduki beans (cooked, of course) to the sauce. I make veggie lasagna that way and I am often asked to do it for potlucks.

Now, if you're ovo-lactic, I might think about a dinner with lots of eggs in it. Perhaps dinner omelettes--you can fill them with choices of tomatoes, peppers, spinach, broccoli, cheeses. Hash brown some potatoes to go with, and a nice fruit salad.

Or, as a side dish, make a spinach souffle. Cook the spinach and drain thoroughly. Sautee some finely diced onion in some oil, maybe add garlic. Separate eggs (for a pound of spinach, about four eggs). Stir the cooled sautee, the drained spinach, and the yolks together until well blended. Beat the egg whites til stiff and fold them in. Put into a lubricated casserole dish and bake at 350 'til the top is medium brown.

And with that, how about some Italian baked cruciferous veggies. Cook broccoli and cauliflower florets, drain, and put in a lubed casserole dish. Mix equal parts plain Italian bread crumbs and parmesan cheese (or romano); dot with butter; bake at 350 'til browned.

Twice-baked potatoes would work well also.

VEGETARIAN CHILI

1 tbsp. safflower oil
1 tsp. minced garlic
1 1/4 c. chopped onions
2 c. crumbled firm tofu
2 c. canned chopped tomatoes
3 c. vegetarian baked beans (partially drained)
1/2 c. ketchup
1 1/2 c. frozen corn
3 tsp. paprika
1 tsp. ground cumin
3/4 tsp. chili powder
1/4 tsp. cayenne pepper
2 tbsp. masa

Before you begin, thinly slice tofu and lay out on a towel, cover with another towel, let stand for 30 minutes. (Don't let tofu scare you it doesn't change flavor of chili, and it's an excellent source of protein.)
1. Heat oil, garlic and onions in Dutch oven. Saute' until onions begin to soften, then add crumbled tofu and saute' for 4 minutes. Add tomatoes, beans, tomato sauce, and corn mix well. Stir in spices and masa. 2. Cover and simmer over medium low heat until chili is heated through and flavors are combined. Stir occasionally. Cook about 30 minutes.

Serves 8-10.

I have a mixed group of friends, some vegetarians some are not. When we gather we make sure that there is something for everyone. The non vegetarians can have meat and those who don't eat meat have the vegetarian dishes. Everyone is always satisfied.

My husband is a veggie and i quite often make fajitas. We often use minced beef(that's for me and my son) and for him and my daughter i use vegetarian mince. Tastes really yummy. By the time you chop the salad, grate the cheese and have all the little side dishes on the table to make your own up he'll be dead impressed. He will think you have gone to a lot of trouble when really you haven't.

Put wine on the table and HEY PRESTO!

How bout BBQ fried Tofu...yummy! Drain tofu on paper towel, cut up in cubes, toss cubes in soy sauce, toss those cubes in a fish seasoning, fry in oil in skillet. Once they are nice and crispy, drain oil off in paper towel, then put BBQ sauce in bowl and toss cubes in there. You can put the cubes in the oven but its really not necessary. Try it first so you can get it right for your guest.

Spinach lasagna w/ side salad and crusty bread.

You could easily make a vegetarian lasagnea,. substituting portabello mushrooms for the meat in the sauce, and stuffing it full of lovely, in season veggies such as zuchini, swiss chard, yellow squash, etc. Or, a stuffed manicotti using the same type ingredients. Green peppers stuffed with rice or quinoa pilaf is always a hit, as are stuffed squash. Grilled veggie kababs are great this time of year, brushed with spicy bbq sauce. A curried cous cous, loaded with seasonal veggies is nice, or a tabouleh salad with fresh mint, tzatziki sauce and pita bread makes a refreshing summer meal. Serve with a bean dip or hummus and a crunchy raw veggie salad or beet slaw. Bean and cheese tacos, burritos or wraps are another favorite. Ratatoulli, though a more winter time food, is hardy and filling, and uses many of the seasonal veggies available now-serve with a crusty loaf of bread. Good luck! My friends (and my daughters young friends) LOVE to eat at our house-they say our diet is much more interesting than what they are used to on a standard omnivore diet.

Eggplant parmigiana is a good meal.

But, I'm wondering why you would subject your guests to your lifestyle. I mean, I'm sure that if you were at their house they would prepare something special that you could eat.

Hospitality dictates you don't "experiment" or push agendas with your guests.

avoid tofu or other "veggie food" true carnivores will reject it before even tasting it.

make pasta w/o meat sauce or eggplant parm or something else that a carnivore would normally eat.

u can make anything a sustitute the meat with nice spicy/ or well seasoned soy products!!!!
