Who first decided to use rotten curdled milk to make cheese?


Who first tested to make sure this stuff was safe to eat?

Year ago a long time ago when there was not refrigeration or bottles/cartons to carry it in as "Jay" said the water and milks were stored and cared in animal skins, with all the humidity and temp changes milk rises in temp and as it sat in the animal skin containers, it soured and with the natural chemicals in the skins coagulated, forming the first rough cheeses more like ricotta or cottage cheese.

The use of rennet was not brought into form until Monks in the 12-13th century, like wine making, sausage the Romans found the ways to come up with it and the first ice cream, cheeses were made and then allowed to hang from the ceiling to ferment and ripen, you have seen Middle Eastern films or traveloges with the bags dangling from the ceiling rafters. Modern or what has transpired over the last 300 yrs, is a refinement of the process, now ther are over 1000 diferent cheese from all over the world.

As a chef, I got to try many, like Yak Cheese, one made with Mare's milk, some of the foulest smelling ones, a load of blue veined and even Lapland cheese made with reindeer milk. It is something made in almost every country from what ever milk is available.

maybe is someone who dun want to confess that he/she din put the milk in refrigerator...
