I use one box of Mori-Nu silken firm tofu and tomatoes for the veggies. cooked lentils and rice with onions and water till its gets really soupy
or rice balls stuffed with prunes or tofu -vegan tacos: taco shells, soy 'beef' crumbles or beans, tomatoes, lettuce, hot sauce
-vegan burgers: vegan burger patties, whole wheat bun, tomato, lettuce, pickle, mustard or veganaise dressing
-pizza: wheat tortilla or pizza dough crust, pizza sauce, veggies (bell peppers, mushrooms, olives or whatever you like), shredded Follow Your Heart Vegan Gourmet cheese (Mozarrella style), vegetarian pepperoni slices (optional)
-bean burritos: vegetarian pinto or black beans, wheat tortillas, green chili sauce or salsa (you can also add brown rice if you like)
-tofu wrap: wheat tortilla, hummus or guacamole, cold tofu (I liked the ready-prepared smoked Tofu best), lettuce, tomato, sprouts
-tofu stir fry: tofu, olive oil (to lightly cook tofu), other veggies (like spinach, broccoli, red bell peppers or whatever you like), tad bit of soy sauce, brown rice
All of these are very quick recipes that really don't take much cooking, other than to simply assemble and heat the ingredients-- perfect for high school or college students. Asparagus Wild Rice
2 cups water
1 cup wild rice
1 lb. mushrooms, thinly sliced
1 large white onion, diced
1 1/2 cups vegetable broth
1 lb. asparagus, woody ends trimmed, sliced
1 Tbsp. extra-virgin olive oil
1 1/2 tsp. balsamic vinegar
Sea salt and black pepper, to taste
鈥?In a pot over medium-high heat, combine the water and rice. Bring to a boil. Reduce the heat, cover, and simmer for 30 minutes, or until the rice is cooked. Set aside.
鈥?In a large frying pan over medium heat, combine the mushrooms, onions, and 3/4 cup of the broth. Bring to a boil and cook, stirring often, until the liquid evaporates and the vegetables are browned.
鈥?Add the remaining broth and the asparagus. Cook until the asparagus is tender. Remove from the heat.
鈥?In a large bowl, whisk together the olive oil and vinegar and toss with the rice and vegetables to coat. Season with salt and pepper.
APPLE SHAKE
1/2 orange peeled, leave on white pithy part
2 green apples, seeded
1 ripe banana
1 tablespoon brewers yeast
orange slice for garnish
Juice the orange and apple. Place juice, banana, and yeast in a blender or food processor, and blend until smooth. Garnish with orange slice.
Open-Faced California Club Sandwich
Ingredients:
4 slices toasted whole-grain bread
1 ripe avocado
1/2 tomato
1 bunch of lettuce or spinach
Goddess salad dressing, or other creamy vegan dressing
sprouts, optional
Directions:
Place two pieces of the toasted bread on each plate.
Slice open the avocado, and use a fork to scoop out the avocado and mash it onto each piece of toast.
Add lettuce or spinach (and sprouts, if desired) on top of the avocado.
Slice the tomato and place two slices on top of the avocado and lettuce/spinach/sprouts on each piece of toast.
Drizzle the salad dressing on top of each piece of toast.
Greekish Salad
Great on hot summer days with wedges of freshly-made bread.
Ingredients
2 tbsp olive oil
splash cider vinegar
陆 tsp salt
1 tsp oregano
2 ripe tomatoes, cut into quarters, then cut the quarters in half
half a cucumber, cut into 1陆 cm slices, then cut the slices into quarters
2 thin slices onion, chopped small
freshly ground black pepper
10 black kalamata olives
Method
Mix the ingredients together and leave to stand for half an hour.
If you like, you can add small pieces of vegan cheese (Redwood Cheezly works well), but it is delicious without it.
