Im sorry that this will sound stupid, but is there a better flour to use in baking?

Besides wheat? I like wheat with pancakes, but Im not sure it will go with the breads I plan to make soon.

Is there a particular kind of flour vegans should eat?

Particular for vegan? No. But, healthiest is the way to go. Therefore, wholegrain, organic, and flavourful is best.

I used to have an organic bakery.
We used all whole grain organic flours, all naturally leavened breads. Definitely naturally leavened is the way to go... using yeast just doesn't taste very good, to me.

Spelt, whole-white-wheat, Kamut, and whole wheat.
Kamut definitely tastes the best (it's a Brand).
Whole white wheat is a type that has little outer bran therefore looks quite pale thus makes a fluffier product.

Definitely wheat flour is great for making bread. It's what people have been using for thousands of years to make bread with. I think the reason Kamut tastes so good is that modern varieties of wheat have been bred to produce quantity, not flavour (as with nearly everything these days). Apparently Kamut is an Ancient grains; that is, has not been cross-bred etc. The bread made from it comes out looking a bit orangeish brown as opposed to a woody brown of whole wheat. There are all kinds of varieties of wheat out there, but of course when you buy your flour, it's never listed on the label what actual grain is used, the species, genus, etc. Likely it's a mix anyway and the processor doesn't even know or care.

For interesting flavours you can also add buckwheat and other flours to your mix. There are so many different grains out there. Buckwheat pancakes are great too.

There is also cake flour, which is flour that is further processed to a finer consistency. It will not be healthier than regular white flour but it's not unhealthier either, and it is best for things that you want to be more delicate and fluffy.

It is stupid, how do you value animals more than people?

Self rising flour works the best for bread!!!!

Use a strong wheat flour for bread.

I am a former chef and for bread, I would mix a number of whole grain flours, like rice, rye, barley, oat, flax, corn and whole wheat.

And add things like sunflower seeds, flax seed, rye flakes, oatmeal, raisins or other dried fruits, not only do you get the benefits of whole grains and the minerals from the nuts and fruits it is a healthier bread. You also can get the children to eat more fiber if the bread is tastier and is more of a fun, it toasts nicer and make a fancier french toast or bread pudding.
