What is your favourite low fat vegetarian dish?


I'm going healthy and trying to lose weight and am trying to give up meat. I would be very grateful for your favourite meal ideas, please. Ideally not too spicy as they will be feeding my children too, thanks!

You're going to want dishes that are fat free and full of nutrients, yet also filling so you don't end up feeling like you need to eat all day, which won't help with weight loss. Here are some great ideas:
Eggplant Parmesian-Roast an eggplant (brushed lightly in olive oil), and top it with tomato sauce and soy cheese.

Portobella burgers- brush a large portabella mushroom cap with olive oil and barbeque it, top it with soy cheese, soy mayonnaise (it comes in reduced fat), ketchup or mustard and place it between two slices of whole wheat bread OR buy whole wheat buns (that might be a tastier choice). Stay away from white bread buns.

Side dishes:
Salad with balsamic vinager and olive oil

small red potato topped with soy cheese, ketchup, or fat free packaged gravy (made WITHOUT turkey or chicken fat)

I love vegetable lasagna.

veggie/cheese lasagne w/red sauce, not white sauce.
Layered cooked noodles (some layers can be made with the spinach noodles), sauteed green pepper, onion, garlic, thinly sliced carrot, thinly sliced zucchini, mushrooms if you like, diced finely (kids won't notice, hehe), and for the cheese layers, a carton of ricotta, a 1/2 cup parm cheese, 1/2 bag shredded mozzerella in a bowl, mix in one egg with it to make it hold up to cooking, season it with parsley to make it pretty.

rice or rice/bean cassaroles.
Spanish rice with beans added to make it a complete protein with corn bread and salad. It is so easy, Just bring your rice and water to a boil, add one can of hunts tomatoes with green pepper and onion, put lid on, simmer on very low for 20 minutes.

Veggie stuffed peppers, stuffed with sauteed onion and celery. Cooked brown rice, an egg to stick it together and a few kidney beans cooked. Stuff parboiled peppers, top with marinara sauce ORr picante sauce and shredded monterey jack/cheddar mixed cheese, yummers.

roasted vegetables:
spray a cookie sheet, add whatever veggies you like, onions, carrot, potato, ruteba, etc., salt and pepper them, sprinkle with olive oil and toss them. Roast until tender. Don't forget to stir them occasionally. There has to be something in there that everyone likes, lol. We eat that with lightly seasoned wild rice or noodles sprinkled with a bit of parm. cheese, pepper, and a spoon of butter.

Meatless chili, with kidney beans, onions, spices, etc.

Bean burritos, with homemade refried beans. I used to just boil up pinto beans, mash them, throw in salsa, spices, onions, peppers, etc. Roll into a whole wheat tortilla, nuke or bake, serve with chopped tomatos, lettuce and salsa.

cabbage soup

You can never go wrong with whole wheat pasta and a nice chunky vegetable sauce with peppers, onions and chucks of tomato.

Bake slices of tofu, sprinkled with spices you like and serve with a healthy salad and whole steamed potatoes.

Grilled vegetables, especially bell peppers and eggplant. You can eat it with rice, as part of a sandwich, on a salad. Yum!!! You can marinate it first in a light vinegarette, or grill them plain. They are so flavorful plain, so the marinade isn't even necessary. They taste so good, have few calories, and are full of vitamins and fiber! I eat them not to lose weight, but to eat well.
