How can i make chinese vegetable rice?

i love this vegetable rice but i have never got to make it,can anyone help me with ideas?

Chinese Vegetable Rice

This is a great dish on its own as a light snack/starter or as an accompaniment to chicken or red meat.


Ingredients



350 g/12 oz long grain rice

1 tsp turmeric

2 tbsp sunflower oil

225 g courgettes, diced

1 red bell pepper, diced

1 green bell pepper, diced

1 green chili

1 meduim carrot, grated

150 g/15 陆 oz beansprouts

6 spring onions, sliced plus to garnish

2 tbsp soy sauce


飩?Place the rice and turmeric in a saucepan of lightly salted water and bring to the boil. Reduce the heat and leave to simmer until the rice is just tender. Drain and press out any excess water.

飩?Heat the oil in a hot wok.

飩?Add the courgettes to the work and stir-fry for 2 minutes

飩?Add the bell peppers and chilli and fry for 2-3 minutes.

飩?Add the cooked rice to the mixture and toss well.

飩?Add the carrots, beansprouts and spring onions to the wok and fry for a further 2 mins. Drizzle with soy sauce and serve garnished with the extra spring onions

One secret of making a good fried rice is to use rice that has been cooked for at least a day.
Lightly fry the vegetables in a wok. If adding an egg now is a good time to do it. Move the veg over and beat the egg in the remaining oil. Flavourings (eg. light soya sauce and fish sauce (nam pla in Thai) can be added with salt to taste.
Then add the rice.
There is no set way of making this dish. The only limitations are your imagination.

The trick is to stir fry the vegetables.
Chinese type of veg would usually include Chinese cabbage and several other typical Chinese greens. Also ginger.
I usually add pre-cooked rice to my stir fry, otherwise you should start with the rice then add greens as you go along.
