How do you make it so a veggie burger isn't crumbly?


I made some veggie burgers last night with potatoes, brown rice, corn, bread crumbs, chips, soy suace, salt, and pepper. They were really good, but they were a bit crumbly.

What can I add to make it less crumbly?

One thing that helps is if you form the burger mix into patties, then refrigerate well before pan frying.

Add a table spoon or so of flour and just enough water to make it all stick together. I use a tupperware burger press that really helps, otherwise form the patties with your hands.

I bake them in the oven to dry them out a bit so they stay stuck together, then pan fry or deep fry them as need. I usually make a huge batch, bake them in the oven, then freeze them. If you freeze them on plates for about 15mins first, you can chuck them all into a bag together in the freezer and they won't stick to each other.

I'm vegan, so I would add a little oil and some white flour. You could even try Xanthan gum or Guar Gum - health shops will usually stock this. Also, you could try semi-freezing the patty or burger - this will help it maintain its original shape when you shallow fry, bake or grill them.

It's tricky to get the mix just right, but after time you will find the right mix that will create the perfect veggy-burger.

If you can eat eggs, (vegetarian) then add an egg to the mix. But eggs aren't the only answer, just for the lazy cook in my opinion ;o)

Baked Beans
Diced onion
Breadcrumbs
Egg
Parsley

Mash/combine all the ingredients, forming a patty shape then cook them with a little bit of olive oil for about 4 minutes on each side.

Try adding egg, unless you are going for vegan burgers. Egg is number one for this kind of thing. Usually one egg will do the trick.

Also a little bit of a marinade makes a great burger. I love adding a touch of teriyaki marinade to my veggie burgers.
