What are the vegan alternatives to eggs?


I cook alot and am trying to switch my diet over to being vegan I have an alternative to most things but not eggs, any suggestions?

instead of 1 egg, you can use...
鈥?1 tbsp gram (chick pea) or soya flour and 1 tbsp water
鈥?1 tbsp arrowroot, 1 tbsp soya flour and 2 tbsp water
鈥?2 tbsp flour, 陆 tbsp shortening, 陆 tsp baking powder and 2 tsp water
鈥?50g tofu blended with the liquid portion of the recipe
鈥?陆 large banana, mashed
鈥?50 ml white sauce

Mashed tofu combined with a little turmeric or with a mix (e.g. Tofu Helper or Fantastic Foods brands) is a nice alternative to scrambled eggs. A good substitute for eggs in baking is a heaping teaspoon of soy flour and a tablespoon of water, or slightly less than a 1/4 cup of applesauce or mashed banana.

Ener-G Egg Replacer is pretty good for baking. I have also used coke or sprite. Coke if is a white cake and sprite if it is dark good.

Tofu: Tofu is great for egg substitutions in recipes that call for a lot of eggs, like quiches or custards. To replace one egg in a recipe, pur茅e 1/4 cup soft tofu. It is important to keep in mind that although tofu doesn鈥檛 fluff up like eggs, it does create a texture that is perfect for 鈥渆ggy鈥?dishes.

In Desserts and Sweet, Baked Goods: Try substituting one banana or 1/4 cup applesauce for each egg called for in a recipe for sweet, baked desserts. These will add some flavor to the recipe, so make sure bananas or apples are compatible with the other flavors in the dessert.

Other Egg Replacement Options

鈥?1 egg = 2 Tbsp. potato starch
鈥?1 egg = 1/4 cup mashed potatoes
鈥?1 egg = 1/4 cup canned pumpkin or squash
鈥?1 egg = 1/4 cup pur茅ed prunes
鈥?1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
鈥?1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water
鈥?1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again

Other than, egg, beans and other legume family are the best sources of proteins.

2 tablespoons of ground flax seed mixed with 5 tablespoons of warm water will give you perfect consistancy egg sub for baking. Just allow it to "gel" for about 5 minutes. I am allergic to eggs and use this replacement all of the time. It also supplyies you with Omega 3 oils, which come from fish. Flax is a good source of nutrition

When I bake, I replace each egg with half a banana and 1/4 a teaspoon of baking soda. And my cakes are just as delicious (:

For baking, the right amount of corn starch and water can take the place of eggs. I did a cake from a box, using corn starch instead of eggs, and it came out fine!! There's also something called "Ener-G Egg Replacer" that some people swear by, but I have had better luck with corn starch, as far as making a cake that actually stayed together. I think you use 2 T COrnstarch and 1 T water for each egg that the recipie calls for.

For breakfast, Instead of scrambled eggs, fried eggs, whatever, make scrambled Tofu. It is so yummy!! Here's my favorite recipie, my own invention.

Mash tofu into a feta cheese like consistency
Put in non-stick skillet and add the following seasonings to taste:

vegetarian CHicken style seasoning or poultry seasoning (that doesn't actually have chicken in it)
Nutritional yeast flakes
Couple dashes soy sauce
Onion powder
Garlic powder
Black pepper.

Hold off on the salt until the tofu is TOTALLY DONE. Poultry seasoning is salty, so is salsa, and it's easy for this recipie to get too salty!! Don't judge till it's completely done.

Let simmer on a lowish- medium setting. While it's simmering, dice some tomatoes pretty small. When tofu is almost done, (getting drier and firmer and "done looking") add tomatoes and some salsa (I prefer Pace Picante mild.) and let cook a bit longer. DOn't add tomatoe products till tofu is almost done, because tomatoes someitmes cause a chemical reaction that stops other ingredients from cooking. Weird, but true.

Eat with tortillas and vegan sour cream and a bit more salsa if you like!!

For sandwiches, try this

Drain and slice tofu into a few 1/2 inch or so slices, to put on a sandwich

Rub both sides of each slice with soy sauce and a vegetarian poultry seasoning.

Lightly "Fry" In a tiny bit of oil or a non-stick skillet. Turn over as necessary.

Makes a great "fried egg" for a sandwich!!

P.S. If you do some surfing, you'll find a dozen different scrambled Tofu recipies. Scrambled tofu makes a GREAT breakfast food. You can vary the recipies to taste.

If you're in a hurry, Amy's has a tofu scramble in a pocket that is absolutely scrumptious. Amy's products also carry a full dish of a tofu scramble with spinach, hash browns, and grilled tomatoes. It's very good.
