One of my employee's daughter breaks out in a rash if she eats anything with soy?

The kid took a liking to me and told me the boys at school make fun of her when her skin breaks out and it broke my heart when she started to cry. What can I recommend she eat since there is soy in practically everything? Can she eat a variety of things? Please help. Thanks.

If she stays away from processed foods she should have no trouble.

Biggest issue are processed or bakery goods - honestly, why aren't her parents checking her food? A mild allergy like a rash can easily turn into hives or an anaphylactic reaction if she keeps getting exposed. That's dangerous, not just aesthetically unpleasant.

Beans, peas, unshelled/unroasted nuts, falafels, chickpeas, lentils, eggs, and organic pasture-raised dairy (if she's even allergic to soy-fed meat/dairy) are good for protein. Make homemade sauces from coconut milk, spices, lemongrass, garlic, ginger - but NOT spice pastes.

Various vegetables, with butter or pure olive oil. Fruit, of course, and homemade popcorn made from kernels.

Avoid most candy - if it doesn't have soy lecithin or oils, many candy moulds are greased with soy oils. No high protein cereals, no protein bars or shakes, no bread - it's impossible to find soy free bread in my town so I bought a breadmaker, most sauces are out, too. No pre-crushed garlic or ginger, since they're suspended in soy oil. No fakey-meats, except those rare birds made entirely out of seitan (wheat meat). No salad dressing.

No food from fast food places, cafes or even sit down restaurants.

Is she vegetarian? Vegan?
I would say stick to a diet that is mostly vegetable, fruits and whole grains. If she isn't vegan them some dairy as well. Just cut out the soy. If she is vegan then add some almond, rice or hemp milk. There are also rice cheeses that are pretty good if you melt them.
And keep giving her all the attention she needs.

If she's not eating packaged convenience foods, there shouldn't be a problem.
