What are some good recipes that are vegetarian and that your kids love?

I have plenty already, but variety is good.

Please only give recipes you have tried with your family. I am looking for recipes and reviews along with it :)

my kids love Macaroni & Peas
Grilled Marinated Tofu Salad

Macaroni & Peas is simple and super economical

1 small onion diced
1 can low salt baby peas
1 can tomato sauce
1 bag ditalini pasta
1 tsp olive oil
salt & pepper to taste

put a large kettle of salted water on to boil for the pasta

sautee onion in olive oil in a large sauce pan or small soup kettle

add peas (liquid & all) and tomato sauce to the onions simmer on low heat until pasta is cooked

Boil pasta according to package direction's, add to tomato peas & onions stir untill well mixed, ladle into soup bowls

Garnish with a sprig of fresh basil & if you like sprinkle with a bit of parmesian cheese

Marinated tofu is also super easy,

Extra firm tofu
favorite vinegrete salad dressing (I use good seasons made with olive oil & balsamic vinegar)
green salad fixings

Drain the liquid from the tofu, place back in original plastic tub and slice in 1/2 inch slices, pour your favorite vinegrette dressing over the tofu gently seperating the slices, cover with plastic wrap and place in the fridge for at least 1/2 hour.

You can grill them in a grill pan or outside on charcoal or gas grill, make sure that the grill very hot & well oiled so that the tofu does not stick

serve over green salad with a nice crusty artisan bread or pita pockets

my kids (14 & 5) love both of these dishes

I know of a great recipe for macaroni and cheese that replaces half the pasta with cauliflower. That way, kids get a treat that's also full of vegetables.
