I have a very large marrow in the fridge - what's the best way to cook it?


I receive a box of organic vegetable every week. The past two weeks this has included a large marrow. Last week I casseroled it with tomatoes and garlic. Does anyone have any other suggestions? It's not a vegetable that's widely covered in cook-books.

Stuffed with something you like. Cut it in half, take out the seeds and fill with something good, maybe pre-cooked meat and veg. Then re-join the two parts, wrap in foil and bake in oven until marrow if cooked. Serve big slices. Yum

Cut it in half, take out the seeds, stuff it with seasoned mincemeat and stuff it in the oven for 40 minutes. You could cover it with foil and ten minutes before it's ready, scatter some Cheddar over it.

Bit of a long shot, but do you get your veg delivered from Riverford Farm in Totnes? I used to get a box of organic veg from them each week. I'd suggest stuffing it with some nice rice concoction, then baking it and covering with grated cheese. That's what I usually do.

O ya know. Get gramps throw him in there and add a little marrow each week. Put Balsamic Vinegar in it and let it marinate overnight. Then you have a well prepared meal.

Greek Marrow/courgette pie

1 pkt of Greek filo pastry
Grated marrow (left a couple of hours in colander to drain)
Lots of different fresh herbs (parsley, basil. mint etc)
I large grated onion
5-6 eggs
grated spicy cheese
Salt and pepper

Lightly fry the onion in olive oil, add grated marrow (squeeze out as much juice as possible) and herbs. When quite dry add whisked eggs and cheese. Stir of a couple of minutes and take off heat.

Lay half the filio pastry in an oven dish (remembering to lightly oil in between sheets) add marrow mixture, and top with remaining filo sheets. Brush egg yolk over the top last filo sheet.

Bake in a hot oven for about 40 minutes or when top is golden brown and when you put a knife it comes out clean.

Eat hot or cold.

Marrows are also known as summer squash.

Marrows can be peeled, seeded and cubed for boiling or they can be cut into thick rings ready for stuffing. Marrows can also be halved lengthways and deseeded before being filled.

To boil, boil for 10 minutes in salted water.

steaming
To steam, sprinkle with salt (allow 1 tsp per pound), and steam for 20 - 40 minutes depending on the age and size of the marrow.

frying
To fry, saute in butter and herbs for 8 - 12 minutes, whilst shaking the pan occasionally.

baking
To bake, place a whole or halved stuffed marrow in the oven for 3/4 - 1 hour 200掳C (400掳F) gas mark 6.

chop it up and roast it along with other veg and put it in cous cous
