Anybody have any ideas for a good vegetarian country breakfast?


Like biscuits and gravy. Stuff like that.

- Fried Grits in veggie oil
- Free range eggs scrambled
- Soy sausage patties
- Juice and or fruit dish
- Hot strong black coffee :-)

Vegan potato-"sausage" hash

Just dice up a potato, a yellow onion, a green or red bell pepper, and a couple faux sausage patties or links (if you don't have "sausage" use veggie burgers).

Preheat oven to 400F. Lighlty grease a baking sheet with some cooking oil, set aside. In a bowl put a tablespoon of oil and mix the potatoes until all are coated. Lay them in a single layer on the baking sheet and put in oven for about 15 minutes or until they are golden brown, stirring them halfway through baking time.

Heat two tablespoons of oil in a medium skillet over medium-high heat. Add onions, bell pepper, some red pepper flakes for piquancy, and some salt and pepper to taste. Cook until veggies are soft and onions translucent. Add cooked potatoes and cut up veggie sausages or burgers and saute until everything is hot.

If you eat cheese you can add some at the end.

VEGAN FRENCH TOAST!!!

INGREDIENTS:

* 2-3 ripe bananas
* 3/4 cup soy milk
* 1 1/2 teaspoon cinnamon
* 1 teaspoon pumpkin pie spice (optional)
* 1 teaspoon vanilla
* bread, any kind is fine
* margarine

PREPARATION:
Blend bananas, soy milk, cinnamon, pumpkin pie spice and vanilla in blender or food processor and pour mixture into pie plate or wide dish. Gently dip bread slices into the mix, coating both sides. Fry in butter or margarine in medium-hot skillet until golden brown.

fried mushrooms,hash browns,grilled tomatoes and grilled plaintains ,if you eat cheese ,hulumi cheese (available from a greek or turkish deli),floured , fried in olive oil will substitute ham in texture and protein.

Hash Browns, basil tomatoes, Cumberland vegetarian sausages, baked beans,
chestnut mushrooms, free range eggs

Stack of pancakes with, fresh turned butter and Vermont Maple Syrup. Freshly squeezed orange juice. and a hot cup of coffee.

I would try a wonderful frittata with all kinds of vegetable, zuchini, onions, tomatoes, garlic and top with cheese.....that does sound good...looks at fridge....

blueberry waffles w/ real blueberry or strawberry sauce...buscuits and gravy...

garden burger sausage links or patties and corn muffins

NOT such a thing
