What is the best way to store & use seeds to get maximum nutritional benefit? Is toasting ok?


Is refrigeration necessary? What about after grinding? Should seeds be eaten soon after grinding?

I am referring specifically to small seeds like sesame and flax/linseed that are apparently to small to digest unless ground.
Does toasting affect the nutritional value?

The best way to store seed is to keep them refrigerated or even frozen. They can turn rancid if left out too long.

You don't have to grind them but if you do, eat them quickly. They'll store longer whole and kept in a cool, dry place.

Answering part two here: I think it depends on how you roast them...how high the temps are.

Here's a site that talks about their roasting process and how it inhances their flax. I think the key is to lightly roast your seeds.

for nuts and seeds, soak in water for 12 to 25 hrs then bake it at temps under 150 degree in oven for no longer then 30 mins
you have to watch the oven, it might be ready in 10mins, you'll know when it's ready, it'll be crunchy and crispy, don't burn em

no refrigation is needed, don't grind em, unless you really want to, you can grind almond in a food proccer and make almond milk by stirring almond powder in hot water..mmmmmmgoood
