Does anyone know how to make vegetarian riblets from scratch?


I have a good tofu rib recipe but I absolutely love the gardenburger riblets and haven't been able to find out how they make them.

I haven't eaten the gardenburger riblets yet, but most of the recipes for vegetarian stuff is tofu, wheat gluten, and perhaps egg whites to bind it all together. Another one that is great for a chewy "meat" like texture and taste is seiten.

The recipe is basically on the box of Vital Wheat Gluten (1 box plus 2 cups liquid - 1 and 3/4 cup of vegetable broth and 1/4 cup of oil). Add about 1/4 cup of nutritional yeast and 1/4 cup of wheat bran (gives it a meaty look with the dark flecks throughout the seiten). Make into little riblet looking shapes, and simmer boil (broth up to a boil, and then down on low to a simmer - if you keep it at a rolling boil, then the seiten pieces will become soggy on the outside) for up to 1 hour in a vegetable broth that covers all the riblets. Then check the riblets every 15 minutes to make sure they get all the broth covered all over them throughout the 1 hour. Chill them, and they are now ready for the tasty BBQ sauce that you can spread all over them, and broil to get a nice glaze over them.

I use this recipe (vital wheat gluten: 1 box plus 2 cups of vegetable broth, 1/4 cup of nutritional yeast, 1/4 cup of wheat bran, 1/4 cup of a good oil (olive, grapeseed, safflower), and the dough will be tough and stringy) for all my seiten recipe stuff (mock chicken, rolled up in cheesecloth for a "tofurky" style of roast, and adding mushrooms to the broth adds a dark earthy flavor to the seiten also).

I am allergic to soybean, so I don't use any tofu, but you can add the tofu in 1/2 cup to the wet mix: 1 and 1/2 cup of broth instead, and blend it in a blender and then add it to the dry mix (vital wheat gluten, yeast, and wheat bran). It gives it a more smooth texture to the seiten (kind of glossy in fact).
