Coffee Experts: Why is it important to use cold water to make coffee?

What difference does water temp make if you're going to boil the water anyway?

i dont know

Actually, in many countries, where I came from too, we boil the water first. The taste is great.
The water is boiled and the steam pushes it through the coffee.

The reason is that in most (but not all) pipes there are metals that can be "dissolved" into the water. The hot water does this more readily and therefore has a higher metal/mineral content. This has an off flavor. If you wanna test it out fill up a glass of cold water, a glass of hot water, and let them sit out until they both reach room temperature then taste them. So by using hot water from the tap you risk having more of these metals (which are relatively harmless) to make your coffee taste not as pleasant. Good luck brewing!

makes no difference what the temp of the water is when u put it in... gonna end up being 210 or so when its going thru the coffee..

probly the same boneheads who think if you use hot water in your ice trays its gonna freeze faster....

Well it only matters if you're using a standard drip coffee maker (which most people are). One of the most important factors in getting good flavored coffee - not too weak, not too bitter - is brewing time. Most standard drip coffee makers have a preset brewing time, so if you use hot water you accelerate the brewing time. When you do that you don't get enough flavor extraction from the grinds and you end up with a brew that is both weak in body and bitter in flavor.

The secret is in the water...:)...Did you ever try to drink hot water(from the tap)...yake. The harder the water(more calcium) more taste in the coffee. Is the same with beer: fresh, crispy taste=water from a mountain spring. So the difference is not in water temperature but in how much calcium the water still has. More you heat the water over and over again, less taste for your coffee.
Enjoy your coffee the way you like it :))
