What is the idea behind japanese traditional food?


What purpose is it meant for to be taken in the way it is?

Like for example eatting small portions or eating raw meat?

Japanese food concerns itself with health, subtle flavor, and presentation. Food is not eaten with the mouth alone. All five senses are to be pleased. Texture of food and the sounds of dining are considered as well.
As for small portions, the Japanese, like the French, are more concern about quality than quantity. And as for raw things, their tastes, like the French, far exceeds the American taste in range.
