Where can I find plans to build an old-fashioned spring house?

Spring houses were build over a spring or small stream. the water flowed through the floor of the structure thereby keeping the interior quite cool.

Most buildings can be built over a spring. Plans are going to be difficult to find, as the large variables are the foundation and the width of the stream or the span of the opening your tempting to cover. As a rule, the only difference would be the size of the floor joists. A small building, less than a 16' span (example 10X14 or 8X12 12X16)could be built by using 2"X12"X 16' treated floor joists, place 16" O/C running perpendicular to the stream.

Hope this helps.
