I am making butternut squash soup and forgot the heavy cream, can I use milk?

It only calls for alittle I just can't jump up and go to the store.

I would leave it and go to the store, personally. If it is whole milk, it will be fine. Skim would be the worst...

Sure you can, it will not be as thick , I think whole milk will be better .

The heavy cream is used due to the fat content, which will make the soup 'come together' nicely.

Here's what you can do in place of the heavy cream:

3/4 cup milk
1/3 cup butter or margarine, melted and cooled

Give that a try. I think you'll like the way it substitutes nicely.

Yes, just simmer the milk in a no stick pan until it reduces by a little. Probably about 1/3 it will take out the water.
